Ever looked at a capsicum and didn’t know what to do with it? Well, I’m here to save you oh capsicum wanderers with this easy capsicum bake recipe.

Get your mix of veggies and protein in this one dish and remember you can also mix up with fillings and use other veggies like mushroom and spinach as well! Be creative!

Lets start cooking!

Ingredients

  • A Capsicum – the red kinds are sweeter and the green kinds are less sweet.
  • Some minced pork or you can use chicken or turkey!
  • A clove of garlic
  • Some corn
  • Some shredded chedder cheese.
  • And some salt and pepper to taste!

Step 1 Prepare your meat stuffing

Squash your garlic clove to loosen the skin and then use a knife and chop it up into little pieces. If you’ve never done this before get an adult to help as it can be quite dangerous!

Now make your stuff by combining the mince with your corn and the garlic bits.

Add salt and pepper to taste

Mix it all up!! Remember you can add different kind of fillings. Feel free to try different mixes and let me know how it goes!1

Step 2 Create your capsicum bowl

Now your trusty capsicum can turn into the perfect bowl for your stuffing. All you need to do is chop off the top cap. The green stalk should fall out, otherwise you can cut it out. and this should create a cute lid. Use a spoon and empty out all the seeds in the middle to create your healthy veggie bowl!!

Step 3. Stuff it!!

This is the fun bit, add your stuffing inside the campsicum and fill it up towards the top! Leave a bit of room at the top for your cheese.

Step 4. Bake Bake Bake!

Put your capsicum bowl with your lid on the side into a oven thats preheated to 180 degrees. You can leave it in there for 15-20 minutes until the meat has cooked your cheese has melted and your capsium has become a bit brown and tasty looking.

And now we’re done!!

All your vitamin C goodness in one compact sized dish!! This was so yummy, you may think of making more than one at a time. Feel free to make a few each time to satisfy your friends and family. It’s amazingly tasty for such a simple dish.

Don’t forget to eat this dish with a smile!

I hope you liked this really simple to make stuffed capsicum dish that is super healthy and low in calories! (remember to go easy on the cheese)

What color capsicum is your favourite?? I love the orange ones!! They are so pretty!
